Hey everyone! We are officially about eight days out from the big celebration for Beans!! Excited and nervous are what I am feeling at this moment. For obvious reasons I am excited. I absolutely love celebrating birthdays. I believe everyone should celebrate life. It is so precious. If you need a reminder of how precious life is, I recommend you read about the recent tragedies in the news to re-freshen your memories.
But I am nervous about her birthday party. First, I am nervous because I hope we have a good showing of folks coming into town next weekend. My biggest fear is to be sitting there with all these party favors and food with no one to help consume such items. That would hurt my feelings and probably tick me off to no end. Lol! I am also nervous because I am baking the cupcakes for her birthday. However, I am allowing Publix to take care of the smash cake and her christening cake (if you don’t have a Publix, you have no idea what you are missing out on… and no I am not getting compensated for mentioning Publix).
Anyway, I am not sure why I feel the need to want to bake for her birthday party. I just feel like I should do this for her. My sister and I have been doing test runs of what we want to make for her party, and I am pleased to report the cupcakes have been DELICIOUS!!! Like for real!! It does not hurt that I have an amazing friend who is a pastry chef to give me tips (if you are in the Atlanta metro area check her out- Cookie Crumbz). So what am I going to be making you ask??? Red velvet cupcakes, key lime cupcakes, and strawberry cupcakes. The first two will be from scratch (I will share the recipes); while the latter will be from the box. I have not been able to find a strawberry cupcake recipe that I really like, but if you all know of any please do share!
Now, I am very confident these cupcakes will taste great. What I am not so sure about is if they will look great. I have the hardest time frosting. It is pretty awful, and we all know that presentation is everything. However, I am reminded of Philippians 4:13, “I can do all things through Christ, which strengthens me.” Yup. I am choosing to believe that God will help your girl out in frosting these bad boys! Lol! So pray for me! I will make sure to post pictures of the final products, and of course of her big day. I would love to hear what you all did for little ones on their special day.
